 Ingredients (Serves 8–10)

  • 1 lb (about 12–14 cups) day-old bread, cubed
Use French bread, sourdough, Italian, or a mix.
  • 4 tbsp unsalted butter (for toasting bread, optional
  • 8 tbsp (1 stick) unsalted butter
  • 1 large onion, finely diced
  • 3–4 celery stalks, diced
  • 2–3 garlic cloves, minced
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tbsp fresh sage, chopped (or 1 tsp dried)
  • 2 tbsp fresh parsley, chopped
  • ½ tsp black pepper
  • 1–1¼ tsp salt (adjust to taste)
  • 2½–3 cups chicken or vegetable broth, warm
  • 2 large eggs, lightly beaten

Instructions

Prep the Bread

You have two options:

Dry Overnight (Best Texture)

Spread bread cubes on a baking sheet and let them sit uncovered overnight.

Quick-Dry

Bake at 275°F (135°C) for 40–50 minutes, stirring once, until dry but not browned.

(For extra flavour, you can toast them with 4 tbsp butter at 350°F for 10–12 minutes.)

Cook the Aromatics

In a large frying/skillet pan, melt 1 stick of butter over medium heat.

Add:

  • Onion
  • Celery

Cook 8–10 minutes until soft.
Add garlic and cook 1 more minute.

Stir in:

  • Sage
  • Thyme
  • Parsley
  • Salt & pepper

Cook 30 seconds, just until fragrant. Remove from heat.

Mix the Stuffing

In a large mixing bowl:

  1. Add dried bread cubes
  2. Pour in the cooked vegetable mixture
  3. Toss to combine

Add 2½ cups warm broth gradually while tossing.
You want the bread moist but not mushy (you may not need all the broth).

Stir in the beaten eggs and any add-ins.

Bake

Transfer stuffing to a buttered baking dish (9×13).

Cover with foil and bake:

  • 350°F (175°C) for 35 minutes

Remove foil and bake:

  • 15–20 minutes more to crisp the top

Remove when cooked/baked and leave to rest and crisp, then serve and enjoy!

With Love,
